Fish Sauce Chicken Wings

Vietnamese-style fried chicken wings dressed in fish sauce.


Mix the ingredients for the sauce. Optionally simmer to reduce and to dissolve sugar.

Season and lightly dredge the chicken wings. Bring oil to frying temp and fry wings until cooked and lightly browned. As the wings are finished, dip/dress in the sauce and drain on a paper towel or a cooling rack. Serve immediately.

Alternatively: Marinade the wings in the fish sauce mixture. Reserve some on the side to dip in after cooking, or simmer the marinade to be used as the dressing itself.
