Sausage Gravy

A hearty white gravy with sausage and onion.

• Butter
• 1 lb sausage meat
• Diced onion
• 2 tbsp flour
• 2 cups milk
• Salt and pepper

Heat a bit of butter and cook sausage until no longer pink, breaking into small pieces. Add onions and sweat. Mix in the flour and cook until no longer raw and starting to brown. Gradually add milk, stirring, and simmer until thickened. Season and serve.
