Garam Masala
A blend of spices, literally meaning “hot spices”, used in cuisine from the Indian subcontinent. There are many variations; here is one by Chef Ranveer Brar:
- 1 cup Coriander seeds
- 3 tsp White cumin seeds
- 1 tsp Black cumin seeds
- 2-3 Black cardamom
- 2 heaped tbsp Black peppercorns
- 2 inch Cinnamon stick
- 8-10 Green cardamom
- 8 Cloves
- 1 Star anise
- 2 Mace
- 2 medium Bay leaves
- 3-4 Byadgi red chilli
- 1/2 tsp Salt
- 1/2 Nutmeg (winter)
- 1 1/2 tsp Fennel seeds (summer)
