Bigos (Hunter's Stew)

Polish stewed meat and sauerkraut

• Kielbasa or similar sausage, lardons or bacon
• Pork and/or other meats, for stewing, in small pieces
• Sauerkraut and shredded green cabbage
• Onions, mushrooms, and other vegetables
• Bay, allspice, pepper, caraway, marjoram, juniper berries, paprika, garlic, tomato paste, dried porcini mushrooms, etc.
• Optional for sweetness: prunes, apple, sugar or honey, raisins
• Stock or water, red wine (opt.)
